Peanut crunch salad

About the Recipe

The crunchiest and the quickest healthy Asian salad you will make this week! I love this mid week when I’m looking for something non fuss while staying super tasty and of course packed with vitamins and minerals for some happy cells 🤗

I love this served with any grilled protein - some salt and pepper grilled tofu is wonderful on top, or a crispy fried egg for the non vegans ❤️

Also a great one to double the quantity and pop in the fridge for lunches as the flavour only gets better!

Ingredients

The salad:


  • Green cabbage, shredded

  • Spring onion, finely chopped

  • Cucumber, chopped

  • + any other crunchy green veg you like! (Snow peas would work well here!)

  • Coriander leaves and toasted sesame seeds to serve



Dressing:


  • 1 Tbs tamari

  • Juice of 1 lime

  • 1 tsp sesame oil

  • 2 tsp grated ginger

  • 1 garlic clove, minced

  • 2 tsp peanut butter (or almond butter)

  • Water to thin as necessary

  • Salt and pepper to taste

Preparation

Simply whisk your dressing together and pour over your prepped salad!
