About the Recipe
The crunchiest and the quickest healthy Asian salad you will make this week! I love this mid week when I’m looking for something non fuss while staying super tasty and of course packed with vitamins and minerals for some happy cells 🤗
I love this served with any grilled protein - some salt and pepper grilled tofu is wonderful on top, or a crispy fried egg for the non vegans ❤️
Also a great one to double the quantity and pop in the fridge for lunches as the flavour only gets better!

Ingredients
The salad:
Green cabbage, shredded
Spring onion, finely chopped
Cucumber, chopped
+ any other crunchy green veg you like! (Snow peas would work well here!)
Coriander leaves and toasted sesame seeds to serve
Dressing:
1 Tbs tamari
Juice of 1 lime
1 tsp sesame oil
2 tsp grated ginger
1 garlic clove, minced
2 tsp peanut butter (or almond butter)
Water to thin as necessary
Salt and pepper to taste
Preparation
Simply whisk your dressing together and pour over your prepped salad!
