Miso Zucchini Boats

About the Recipe

This whole thing is gut friendly - miso is wonderful for gut health! As well as completely plant based, gluten and dairy free, anti-inflammatory and low gi.
Excellent served with any of your favorite salads

Ingredients

Ingredients:

  • 2 zucchini - halved

  • Greens to serve

  • Toasted sesame seeds to serve

  • Spring onion to serve

  • Salt


Miso glaze:

  • 2 tbs miso paste (white)

  • 1 tbs tahini

  • 1 tbs tamari

  • 1 tbs rice wine vinegar

  • 1 tbs maple

  • 1 tsp sesame oil

  • 1 tsp fresh grated ginger

  • 1 clove garlic, minced

Preparation

Step 1

Preheat oven to 200 C. Line an oven tray with baking paper.


Step 2

Cut your zucchini into halves. Score the flesh with a Criss cross motion (do not cut through all the way). Sprinkle salt across the flesh and leave while you whisk up your glaze.


Step 3

Put all miso glaze ingredients into a bowl and whisk. Add about half a cup of water to thin out a bit.


Step 4

Wipe the excess water and salt off the zucchini’s. Place into oven tray and cover with the glaze.


Step 5

Roast for 25 minutes, at the half way point remove from oven and baste with the glaze in the bottom of the pan.


Step 6

Serve and top with sesame and spring onion
