They are SO simple to prepare and full of gut loving goodness.

The marinade is a simple mix of;
2 Tbs miso
1 Tbs tamari
1 Tbs maple
1 Tbs grated fresh ginger
Pinch on pepper to taste
Either with a mandolin or peeler, cut thin strips of zucchini. Thread them onto skewers, brush with the marinade and cook on high heat until nice and brown.
Serve with a little squeeze of lemon and your favourite fresh herbs! YUM 😋
